今天的台南美食列車來到鹽水,由在地的沈家鳳議員帶路,來看一道只有在新營、鹽水一帶才看得到的美食:豬頭飯!
一聽到豬頭飯的名字,大家腦中會浮現什麼畫面?一顆大大的豬頭放在飯上嗎?但是實際端上來,看起來卻是一碗略帶肉汁顏色的米飯。
實際上,豬頭飯的原名是「鋤頭飯」,農耕年代時,每天一早附近的農夫就會扛著鋤頭來這裡吃飯,獨特的景象被稱為鋤頭飯,久而久之才演變成「豬頭飯」。
豬頭飯看似簡單,裡面卻是選用豬大骨、三層肉熬製成高湯,再淋到在來米飯上,對火侯非常要求。如果來鹽水,絕對不能錯過!
